Spicy Arugula and Citrus Salad

Ingredients:


  • 4 cups of fresh arugula or arugula microgreens

  • 1 cup of mixed citrus segments (think oranges, grapefruits, and mandarins)

  • 1/2 cup of thinly sliced red onion

  • 1/3 cup of crumbled feta cheese

  • 1/4 cup of toasted walnuts

  • 3 tablespoons of olive oil

  • 2 tablespoons of fresh lemon juice

  • Salt and pepper to taste


Directions:


Step 1: Prepare the Citrus

First, peel the citrus fruits. Then, cut them into segments. This step adds a burst of flavor and color to your salad.

Step 2: Slice the Onion

Next, take your red onion and slice it thinly. This will add a nice crunch and a bit of sharpness to your dish.

Step 3: Toast the Walnuts

In a dry skillet, toast the walnuts over medium heat for about 3-5 minutes. Stir them frequently to avoid burning. The toasting enhances their nutty flavor.

Step 4: Combine Ingredients

In a large bowl, combine the arugula, citrus segments, red onion, feta cheese, and walnuts. Gently toss them together.
