Welcome to Dancing Cub Farm and Microgreens

Established in 2023 in Shenandoah County, Virginia, Dancing Cub Farm began with a simple question: How can I turn my love of gardening, my passion for healthy food, and my desire to care for my family into something meaningful?

After moving back to Virginia to help care for my father, I started growing microgreens and teaching my community about their incredible flavor and nutrition. What began as a small project in 2023 quickly grew into a full‑scale creative journey — developing breads, tortillas, vinegars, seasonings, salts, sugars, rubs, dips, and a full gluten‑free line infused with microgreens.

In 2024, I became a licensed LLC and built a fully approved commercial home kitchen. Today, Dancing Cub Farm is a microgreen‑powered artisan food brand focused on flavor, nutrition, sustainability, and zero waste. Nearly all packaging is compostable, most herbs are grown on the farm, and every product is crafted with intention.

The name comes from my dad, known as “The Dancing Bear” during his 18‑year professional football career. As his daughter, I proudly carry the name “Dancing Cub.”

Dancing Cub Farm

Microgreens are young versions of common vegetables like cabbage, mustard greens, kale, spinach, and broccoli.

Microgreens offer a high concentration of vitamins and minerals due to their short growth cycle. A serving size of around 2 tablespoons contains up to 9 times the nutritional value of mature plants.

Key nutrients include lycopene, lutein, zeaxanthin, beta-carotene, and sulforaphane, which support a healthy immune system and help fight chronic diseases.

Microgreens are also rich in potassium, iron, zinc, magnesium, and copper. Nutritional content varies by type.

Mustard greens: High in vitamins A, C, and K, folate, iron, and omega-3 fatty acids, beneficial for heart health.

Broccoli: Rich in calcium, vitamins A and K, supporting strong bones.

Radish: Contains vitamin C, B6, calcium, and magnesium, essential for immune health.
