RADISH MICROGREEN RAITA

Mix yogurt with chopped radish microgreens, grated cucumber, and a touch of roasted cumin powder. Season with salt and pepper, and serve as a side dish with Indian meals.
INGREDIENTS
1 Cup Greek yogurt, any fat % you like
2-3 oz radish microgreens, chopped
¼-1/2 cup walnuts chopped, toasted preferably
1 Green chilli chopped, optional
Salt to taste
¼ tsp freshly ground black pepper
8-10 fresh mint leaves
3 tbsps pomegranate arils
INSTRUCTIONS
Whisk the yogurt with salt.
Add grated Radish, sea salt, 1/2 the black pepper and half of the chopped Walnuts. Mix well.
Tear or chop the mint leaves roughly with your fingers and add to the raita. Mix well and transfer to a serving dish.
Garnish with the remaining mint, walnuts, chopped green chillies.
Chill and serve as a dip or side to accompany any Indian recipe.
